February is heart health month, take care of your heart by choosing nutrient foods and making a habit of being active. Fruit and vegetables are considered nutrient dense foods. They are also a good source of fiber, so find ways to add more vegetables and fruit to your lifestyle.

As we resist the urge to reach for comforting foods, here is a recipe that you may enjoy that is comforting without the guilt. This recipe is easy to prepare and will be great on a cold day. Cabbage is very versatile in cooking; it is rich in vitamin C, fiber, and vitamin K. Tomatoes contain vitamin A, C, E, and minerals (potassium). You may choose a different type of protein for this recipe, such as ground turkey, ground chicken, or Italian sausage. You may also pair this soup with brown rice or add carrots to include a serving of carbohydrates to meal

RECIPE HIGHLIGHT: Cabbage Beef Soup

 

Ingredients:

3 tablespoons olive oil
 
½ onion, chopped
 
2 cloves garlic, chopped
 
2 quarts water
 
4 teaspoons chicken bouillon granules
 
1 teaspoon salt, or to taste
 
1 lb. beef
 
½ teaspoon black pepper, or to taste
 
½ head cabbage, cored and coarsely chopped
 
1 (14.5 ounce) can Italian-style stewed tomatoes, drained and diced

  • Heat olive oil in a large stockpot over medium heat. Stir in onion and garlic; cook until onion has softened, about 5 minutes.
  • Stir in water, bouillon, salt, and pepper. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, about 10 minutes.
  • Stir in tomatoes. Return to a boil, then simmer 15 to 30 minutes, stirring often.
  • Serve hot and enjoy!

INGALLS GO THE EXTRA MILE VIRTUAL CHALLENGE

The Go the Extra Mile Virtual Challenge is a fun way to get fit and prepare for the Ingalls 5K, on Saturday, April 12. All fitness levels are welcome to join the weekly online training sessions for insight on a successful run, walk or jog. Sign up to get connected with a coach and receive a training plan and weekly tips for the six weeks leading up to the 5K. Participants must complete a wellness or nutrition coaching session with a QuadMed coach between Jan. 27 and April 7 that includes discussion about training for the 5K in that session. All HII employees and dependents over the age of 18 are eligible to participate. Register today.

Q: How much fruit and vegetables should I eat daily?

A: According to American Heart Association, adults should consume 2 cups of fruit and 2.5 cups of vegetables daily. Remember vegetables cook down easily, so about 2.5 cups of cooked vegetables. If the vegetable is leafy greens, about 5 cups raw.
